In the manual (7.8.2, page 63) logging variables can be found for “Now Playing” e.g. %a = Artist, %b = Title etc. These variables only are valid for current items.
Are there any possibilities for “Items recently played” and “Items coming up next”?

Next is %xn
Previous is %1…3n
(the number 3 to show the last 3 tracks/items played) so for a single item previously played = %1…1n
Not sure which method mAirList allows if any.

No, mAirList does not support it.
For previous items, keep a cache on your server (or wherever that log is displayed).
For upcoming items, there is no way to do that without a custom script.
